Fermented Foods are nothing new.  What are they? Why the sudden burst of popularity?  Is it something you can do at home?

During our 2018 trip to Europe, one of the unexpected outcomes of our trip was being introduced to fermented foods.  We decided to try producing them at home to some unexpected and interesting results.
